EASY SEASONAL LAMB ROAST WITH HOMEMADE MINT SAUCE

We hope you enjoy our simple leg of lamb recipe – let us know what you think! Serves 4. Prep time: 20 mins. Cooking time: 1hr and 40 mins

Ingredients:

Directions:

  • Heat the oven to 220C (220C fan) or gas 7. Remove all packaging and make a note of the weight of the lamb for cooking time.
  • Make incisions into the lamb using a small sharp knife, at an angle, about 5cm into the meat.
  • Insert a short sprig of rosemary and garlic slice into each of the holes, pressing them in with your finger. Season the lamb all over with salt and pepper (and any other seasoning of your choice), then rub the lamb all over with olive oil.
  • Transfer to a roasting tin, sat on the sliced onions and roast for 20 minutes.
  • Lower the oven to 190C (170C fan) or gas 5 and cook for another 15-20 mins per 500g (1hr – 1hr 20 mins for 2kg leg) depending on how pink you like your lamb.
  • You can also check the internal temp of the lamb – it will be 55C for medium (pink) and 70C for well done.
  • Cover with foil and rest for 15 mins before carving. Make gravy with the extra juices and onions.

We recommend this simple 5 minute home-made mint sauce:

Ingredients:

  • 1 large bunch of fresh mint (about 30g)
  • 240ml (1 cup) boiling water
  • 2 tsp sugar (caster is best)
  • 2 tbsp malt vinegar
  • pinch of salt

Directions:

  • Finely chop the mint leaves – discarding the stalks.
  • Place in a bowl and cover with the boiling water. Leave to steep for a few minutes, then drain over a sieve.
  • Give the leaves a rinse with cold water whilst still in the sieve (to stop the cooking process) and place in a small serving bowl with the sugar, vinegar and salt.
  • Stir together and leave for 20-30 minutes – to allow the flavours develop.
  • Drizzle onto your lamb and enjoy!
