Pork and Chorizo Meatballs

Indulge in the irresistible flavours of our homemade meatball recipe, made with high-quality Puddledub Pork mince and our special blend of Puddledub Chorizo. Our chorizo is crafted using fresh red chillis, ensuring each batch brings a unique level of heat to the dish.


Serves 6

400g Puddledub pork mince
400g Puddledub chorizo sausage
70g breadcrumbs
2 spring onions – chopped
3 tbsp chopped fresh parsley
2 tbsp chopped fresh thyme
1 large egg

1 medium onion – finely chopped
1 tin chopped tomatoes
1 large clove garlic – finely sliced
1 tbsp oil
3 tbsp chopped fresh parsley

1. Set the oven to 200C/400F/Gas 6

2. Remove the casings from the chorizo and break up the sausages with your hands, mix with the pork mince, breadcrumbs, spring onions, herbs and egg. Mix together well breaking up any lumps as you go.

3. Form into 32 meatballs and place on a lightly greased baking sheet. Place in the oven to cook for 20mins.

4. Make the sauce – Heat the oil in a wide based, shallow pan. Fry the onion and garlic gently until soft, add the tomatoes, bring to the boil and simmer for 10min with the lid on.

5. Once the meatballs are cooked, transfer to the sauce, add enough water if needed to bring the sauce ¾ of the way up the meatballs. Bring to a gentle simmer and cook for 30min with a lid on the pan.

6. Check seasoning, stir in the chopped parsley and serve.
